The Swiss know their Sausage

Cervelas Farcis

I saw this yesterday while doing a little Christmas shopping at Galerie Lafayette. Cervelas is a type of sausage typically found in french speaking Switzerland. They are prepared like this as “cervelas farcis” which means the sausages are sliced open and stuffed with thin slices of gruyère cheese and smoked bacon then wrapped with more bacon to form a nice little bundle. Who needs a bun when the whole package is swathed in bacon?
